I've heard it a million ways, but the correct pronunciation is ky-eek. There is a Turkish form of Caique which refers to a light skiff or rowboat used on the Bosporus; also, a Levantine vessel of larger size.

Kike is actually the 'technical', aka correct pronouncation of the word. You will often heard old aviculturists pronounce the birds names this way. But, as this is also a politically incorrect term these days, the pronunciation of ky-eek was adopted.
