So, I was doing somemore research on gluten and birds and learned that is can effect certain species and genders (such as ekkies) so I thought that trying gluten free would be a good option. I have a 'fortunate' situation; my brother is gluten intollerant, so that makes things much easier. I decided I would try out a recipe from my new book and modify it as so:
Ingredients:
1 cup Gluten-Free All Purpose Baking Mix (made by Arrowhead Mills)
1/2 tbs sugar (I used a Cactus Honey Powder made my Arizona Farms)
1/4 tsp salt (I didn't use this, but the original recipe called for it)
2 eggs, 3 if you double the recipe
3/4 cup milk
1/4 cup oil (I used olive oil)
1 ripe banana, mashed
1/2 cup blueberries (I use a frozen blueberry/raseberry mix)
3 tsp Baking powder (I halved the recipe, but with gluten free, I add around the same amount as originally called for b/c its heavier than normal flour)
Directions:
Perheat waffle iron.
In a large bowl, combine the flour, sugar, baking powder, and salt.
In a medium bowl, beat the eggs with an electirc mixer until foamy.
Add the milk, oil, and bananas. Mix well.
Pour into dry ingredients and mix until smooth.
Fold in blueberries.
Make like normal waffles. Serve slightly warm but not hot.
I hope this book gives me (and you) and lot of ideas for the fids. I think that taking out the gluten will be a huge help. Seeing what heppens when my brother has gluten vs when he doesn't, its like looking at a different child. I'm hoping it will be the same with Lucy...
