Default Sweet Potato Burrito

Sweet Potato Burrito

1 Sweet Potato
Unsweetened Fruit Juice
Sprinkle of Cinnamon
¼ cup chopped Almonds or Walnuts
Whole Grain Bread

Steam your Sweet Potato until tender, peel and mash. Add chopped nuts and Cinnamon. Add a small amount of unsweetened fruit juice to the mashed Sweet Potato/Nut mixture to make a paste.

Flatten a piece of Whole Grain bread with a rolling pin. Spread a layer of the Sweet Potato mixture on the bread and roll tightly like a burrito. Slice and serve!

I think if I could get them past the initial look of it they might like it. I tried sweet potato stuffed mini cones once and Afa hung onto the side of the cage screaming with her eyes bulging like a big monster was gonna eat her! I just got them to eat whole grain toast. Its the Pepperidge Farm Healthy Nut Bread. Maybe if I use that as the warp it might work!

Kady was afraid of the mini cones also. But he can't resist bread so this recipe was designed for him. We use the Arnold Health Nut Bread here. I'll have to check out the PF brand one of these days.

I got it on sale for $1.50, couldnt pass it up so we bought a bunch of different whole grains and froze them. Turns out I like it!
