Default Veggie Bowl Recipe

I had one of my veggie recipes turn out really good today, so I thought I'd share.

1 peeled & grated extra large Yam, then lightly steam it
1 box frozen chopped Broccoli
1 box frozen chopped Spinach
1 large bag frozen mixed veggies
3/4 cup cooked brown rice
1 cup cooked Volkman Featherglow Soak & Simmer Bean mix (ingredients & cooking instructions below)
1 cup Volkman Soak & Serve (ingredients & cooking instructions below)



Volkman Featherglow Soak & Simmer (This is a great bean mix that cooks up quick with tender but not mushy beans)
Cooking instructions:
Add one-part mix to two-parts boiling water. After water returns to a boil, cover and simmer at reduced heat for 45-50 minutes or until beans are tender. Cooking them slow used up all the liquid and they were done just as the liquid was gone.
Contains:
Soy beans, paddy rice, whole wheat, Alaska green peas, yellow corn, white peas, popcorn, pearl barley, oat groats, red lentils, green and yellow split peas, white corn, green baby lima beans, small red beans, black turtle beans, kidney beans, pinto beans, black-eye beans, buckwheat, white northern beans.

Volkman Soak & Serve
Cooking instructions:
It's simple to make. Simply place the desired amount of dry mix in a bowl and cover with boiling water. Cover the bowl and let the mix soak for 15 to 20 minutes. Drain the remaining water, stir to cool and serve.
Contains:
Barley, Paddy Rice, Red Lentils, Carrot Dices, Split Green Peas, Diced Bell Pepers, Rolled Corn, Oat Groats, Banana Chips, Tree Nuts (walnuts, almonds, pistachios, hazelnuts), Hulled Pumpkin Seed, Fruit Medley (sun-dried diced peaches, nectarines, apricots, pears, golden raisins, black currants, cranberries), Peanuts, Apple Dices, Coconut Chips and Dehydrated Green Peas.

Wow Karen, that sounds and looks like a great recipe! Will definitely have to try it. Just gotta find the Volkman stuff.

Karen, a question - the quantities for both of the Volkman products, would that be one cup each before cooking?

I just ordered some of both, I can't wait to try your recipe!

Nate, it was 1 cup before cooking. The entire recipe netted about 12 cups of food, give or take. I actually had to switch to a bigger bowl because it kept growing as I was adding things.
