I'm making a new batch of mash today and I remember learning I should "blanch" the veggies first. How do I blanch veggies? How hot should the bacon grease be?

just kidding about the bacon grease by the way. The instructions I found mention dipping the veggies in ice water after boiling? I'm off to do the rest of my shopping. Its Veggie time!!
